很小的时候,常常看喜欢烹饪的阿姨,照着食谱一步一步的做着各式各样的糕点。
当我要搬家时,跟她要了几本。她总会跟我说:好拿去,可要收好噢。
答应了阿姨,要好好收藏她的食谱。
就这样,一直收着年龄已有三十好几的食谱在我的书橱里。
呵呵,书本吃了长生不老药,还是好好的啦,没烂。
偶尔还是会拿出来翻翻,看看以前的烹饪步骤和现在的有什么不同。
之前跟了老食谱里边的一两个recipe,感觉材料的份量,尤其是面粉都会加得比较多。
难道以前的人喜欢吃比较有份量,比较硬的蛋糕吗?
嘻嘻,今天我又再次来寻宝。
十几面的一本书,我就不信没有一个食谱可以让我满意。
结果,就诞生了这个很绵密,湿润的巧克力蛋糕。
食谱如下:
Ingredients 材料:
150gm Butter 牛油
165gm Caster sugar 细糖
170gm Cake flour 低筋面粉
30gm Cocoa flour 可可粉
1tsp Baking powder 自发粉
50ml Chocolate flavor milk 巧克力口味鲜奶
4 Eggs 鸡蛋
1)
Beat butter and caster sugar until white and fully, sugar dissolved.
打发牛油和糖。
2)
Beat eggs in another bowl until fluffy.
在另一个碗里打发鸡蛋。
3)
Sift cake flour, cocoa flour and baking powder a few times.
所有的粉过筛几次。
4)
Add the beaten egg mixture into the butter mixture slowly. Mix well。
把打发的蛋液加入打发的牛油里。搅拌均匀。
5)
Add in the flour alternate with milk until finish.
交替加入粉类和鲜奶。
6)
Preheat the oven. Place baking sheet in the baking pan. Bake the cake until done.
预热烘炉。在烘盘里铺上蛋糕纸。将蛋糕烘着熟透。

Take out the cake from the pan. Invert the cake on the rack until cool.
蛋糕脱模,倒扣在架子上。

hi sherleen, nice to know you. You are really lucky to have those old books passed down by your aunt. Think they are so precious. I'm sure you will find many great ideas in them regardless they are from old books. I can see that your choc cake is really good and tender. 蛋糕脱模后不久吃这蛋糕,口感真的很绵密,湿润。下次我还要再做做看,看看成品会不会一致。哈哈!

这蛋糕吃起来很有分量,绵绵的,不是松软的那一种。
我的烤炉比较热情,我只用了145度,靠大约30min。你可以用一般你家烤炉烤蛋糕的温度就可以了。
