Longan Muffin 桂圆满芬

从槟城刮起的桂圆风,让我找到怎样消耗冰厨里的桂圆肉。
每一样材料其实我都买齐很久了,可是迟迟都还没给这蛋糕亮相的机会。
Yakult一条五罐,已经被喝剩最后一罐。
是怎样现在,不可能再等了吧。

桂圆肉QQ的,加上烤香的核桃,口感很棒。
可是比较遗憾,我的桂圆肉并没有很香,所以蛋糕的香气不会很浓。
第一次吃到蛋糕用桂圆这种一般上拿来煮甜汤的材料,我觉得是很新鲜的尝试。

Longan Muffin 桂圆满芬

Recipe from My Mum's Cake House

Ingredients 材料:
67gm Dried black longan 桂圆肉(黑色龙眼干)
1'no. Egg 鸡蛋
70gm Sugar 幼糖

50ml Corn oil 植物油
60gm Yakult

83gm flour 低粉
1/4tsp Baking powder
发粉
1/4tsp Baking soda 苏打粉

Some walnut - roast and cut into cubes
核桃 - 烤香切丁

Method 做法:
1)
Cut dried longan into shreds. Soak in Yakult for 1hr.
将桂圆肉剪成丝。然后用Yakult浸泡1个小时。

2)
Drain the shredded longan, yakult set aside for later use.
把桂圆肉捞起,Yakult备用。

3)
Beat egg and sugar together, mix well. Then add in corn oil and Yakult, mix well.
全蛋加入细砂糖用打蛋器搅拌均匀后,加入沙拉油和Yakult搅拌均匀。

4)
Add in sifted flour, baking powder and baking soda into the mixture, follow by the shredded longan. Using spatula to mix well.
加入过筛的粉类,最后加入桂圆肉,改用橡皮刮刀把它搅拌均匀。

5)
Scoop the batter into cupcake liners to 80% full. Sprinkle some walnut cubes on top of the batter.
将面糊倒入纸杯内至8分满。再洒上适量的核桃。

6)
Bake in preheated oven of 150C, for 20min.
烤箱预热后,于150度,烘烤20min。

Servings: 6 muffins
