情人节作莫做水饺的?
呵呵,因为不满意昨晚做的咯,所以再做一次。
几乎每一次做水饺,我都买现成的水饺皮。
可是那一买就是五十,一百张的,我觉得太多了。
而且,现在比较喜欢自己“包头包尾”。

这次用了冷水面团,加上是属中筋面粉,面皮比较有弹性,也比较Q,所以面皮要尽量桿得很薄。
试了两次后,发现醒面的时间长些,面皮比较好操作。
滑滑嫩嫩的皮,很听话哦。很喜欢包好后的样子,圆鼓鼓的。
可是煮好的饺子全部都变形了啦,皮啊,肉啊,全都缩在一起,所以统统走样廖。而且内馅也比较淡。
下次,要塞多一点馅在里边,再挤出多余的空气,这样饺子就不会这么丑样了。  



吃了水饺当茶点,晚上就去吃没有烛光的晚餐。
我家老爷说,我们只要每天都很爱对方,每天都是情人节。
这么说来,那我不是每天都可以讨礼物咯。嘻嘻嘻。。。
现在很少收到礼物了,比较多是一起去买,然后他付钱。
他说这样才可以确保买到的东西是我最喜欢的,也是最值得的。
虽然少了一些惊喜,但好过没有啦。我家老爷不懂得浪漫,踏踏实实会顾家,会疼老婆。
有时小小要求难免会有,但心里很感恩他这么多年来的照顾。谢谢咯!

Cabbage Dumplings 包菜水饺

Skin recipe refer to 《成功示范中式面食点心》
Fillings recipe refer to 《面食小点心》

Cold water dough 冷水面团
Ingredients 材料:
180gm Pau flour/All purpose flour 中筋面粉
110gm Water (Below 30degree Celsius) 水 (水温低于30度C)
1tsp Salt 盐

Method 做法:
1)
Sift the flour, add in salt and 90gm water, mix the flour. Add in the remaining 20gm water slowly and knead into a dough.
面粉过筛,加入盐和90gm水,搅拌均匀。慢慢倒入剩下的20gm水,揉成面团。

2)
Cover the dough with a damp cloth and rest for 30min - 1hr. 
盖上微湿的布,醒面30min - 1hr。

Notes:
To substitute pau flour, mix high protein flour and protein flour (cake flour) with ratio 1:1.
混合1:1的高筋面粉和低筋面粉,就成了中筋面粉。

Fillings 内馅
Ingredients 材料:
300gm Cabbage - chop 包菜 - 切碎
50gm Carrot - chop 红萝卜 - 切碎
200gm Minced meat 绞肉

Seasonings:
1tsp Light soy sauce 酱清
1tsp Oyster sauce 耗油
1tsp Cooking wine 米酒
1/2tsp Pepper powder 胡椒粉
1/2tsp Sesame oil 麻油
Salt to taste 适量的盐

Method 做法:
1)
Beat minced meat into sticky form.
肉打着起胶。

2)
Mix all the ingredients and seasonings together.
材料和调味料混合均匀。

3)
Divide the dough into 10gm each. Roll out the small dough become a thin sheet.
面团切分成10gm一小个。把小面团桿薄。

4)
Fill in the small dough with half tablespoon of fillings. (*I used measurement spoon which has round shape scoop.) Wrapped the dough tightly. Sprinkle enough flour in the plate before placing the dumplings.
包入1/2汤匙的馅料。(*我用圆低的量匙。)压紧守口。在装饺子的盘里洒上足够的粉。

5)
Boil half pot of water which is enough to cover all the dumplings.
烧开半锅的水。确保水可以淹过所有的饺子。

6)
Put in the dumplings when the water is boiled. Slightly stir to avoid the dumplings stick to the pot.
水滚开后,放入饺子。稍微搅拌以防粘锅。

7)
When water turns to boil, pour in 1 cup of cold water. Repeat this step twice. Dumplings are ready to serve.
当水已经滚了,倒入1杯冷水。重复此动作两次。饺子就可捞起。

Dark Vinegar Dipping Sauce 姜醋沾酱
Ingredients 材料:
2tbsp Dark Vinegar 黑醋
Some julienne Ginger  姜丝

Method 做法:
1)
Mix both well.
材料混合均匀。

Servings: 28pcs

  17. We love eating Chinese dumplings but I wasn't brave enough at this stage to cook my own dumplings all the way from scratch.
