大家都好像收工的收工,回乡的回乡。。。
我大扫除做了,也没有家乡要回。
还有点“目”,我继续上我的年饼吧。呵呵。。。

看妈妈阿姨做这个蚂蚁蛋的记忆,停留在二年级。
去年,乘回去阿姨那,抄了她的食谱回来。
靠着那一丁点的记忆,我要来试做做看。

就如之前所说的,妈妈阿姨渐渐有了年纪,我多么希望可以把她们以往会做的手艺学起来。
这么说起来,他们还真是没有真正传授过我她们的本领雷。
这些大忙人,自从我长大以后,要她们自己下厨捏这捏那的时间简直是稀贵。
可惜,可惜。。。但还不迟。我还是可以问问,再自己摸索。

说说这个蚂蚁蛋,因为用了很多的署粉,所以饼本身是比较松的,再带点脆脆感。
就好像在泥土里的蚂蚁蛋,那样松松的。
这蚂蚁蛋,自传统以来,一定会用红青cherries做装饰。
我是不知道它的故事啦,可是一边做时,感觉红色的,青色的,就象掉在泥土,蚂蚁蛋上的花花草草。(哈哈,我乱掰的啦!)



Ant Eggs Cookies 蚂蚁蛋曲奇

Recipe from My aunty many decades handwriting recipe notebook

Ingredients 材料:
150gm Icing sugar 糖粉
225gm Butter 牛油
2 Egg yolks 蛋黄
1/3tsp Vanilla essence 香草精
250gm Plain flour 面粉
240gm Corn flour 署粉

Some red and green cherries 红青樱桃适量

Method 做法:
1)
Cut red and green cherries into small bits.
红青樱桃切成幼末。

2)
Beat butter with sugar until slightly white.
牛油和糖粉搅拌成微发白。

3)
Add in egg yolks and mix well.
加入蛋黄搅拌均匀。

4)
Add in vanilla essence and plain flour.
加入香草精和面粉。

5)
Add in corn flour slowly to get the dough that is not too soft or too dry.
分几次加入署粉以确保面团不会过软和过干。

Form the big dough into some small doughs. Grate the mixture so that small round bits form.(*Always remember to shake the bowl to avoid the small bits stick to each other.)
把面团分别搓成几个小面团。用刨丝刀把面团泡成小碎粒。(*要不时摇晃容器,以免小碎粒沾粘在一起。)

Scoop these bits in the cupcake liners. (*I used the smallest liners. After filling in a liner, it is weighted around 6gm.) Then, garnish with some cherries.
小碎粒装入纸杯里。(*我用最小的纸杯,装满的纸杯总重量大约6gm。) 然后,在碎粒上洒上樱桃末。

8)
Bake in preheated oven of 130 degree celcius for 20-22min.
放进预热130C的烤箱,烤20-22min。

Servings: 145pc
