Almond Cookies 杏仁曲奇

有没有发现到,我家的雪人一直在唱独角戏。
今年,想在部落的家里应景一下,却发现原来我只有一百零一个雪人在过圣诞。
以前的圣诞节,我都在哪呢?
肯定在莫个角落,可是部落的家却是冷清的。
明年吧,明年给我的雪人增添新朋友,让它有玩伴,有热闹的圣诞节。



在平安夜那天,我做了从Ann那抄来的曲奇食谱。
因为觉得有点甜,我没在曲奇上洒糖粉,那就没办法把它联想成是为了圣诞节而做的饼干咯。
所以,我只能给它取名叫杏仁曲奇。
一颗一颗圆圆的球,看起来像不像石头。我怎样看它们,都觉得好单调的曲奇,照片好像在诉说雪人迷路记的故事。住在冰天雪地的雪人,被捆在炎热干旱的荒山里。
就这样,在Ann家逗留了一阵子,欣赏她那铺排的美美的装饰。





因为这曲奇的味道真的很香,放了几个小时后饼干好脆,所以今天我又做了一批。
这也是我第一次做很大分量的饼干。
刚巧明天要去拜访刚刚新家入伙的朋友,带这曲奇去希望他们会喜欢。
呵呵,想不到今年,我有那么多的第一次。
这也是第一次,破天荒上载了这么多张照片在一张帖子里。


Almond Cookies 杏仁曲奇

Recipe from Anncoo Journal with minor adjustment

Ingredients 材料:
150gm Plain flour 面粉
50gm Ground almonds 杏仁碎
120gm Butter - softened 牛油 - 室温
50gm Icing sugar 糖粉 (*Reduce to 45gm)
A pinch of salt 盐适量
1/2tsp Vanilla extract 香草精

Method 做法:
1)
Preheat oven to 145C. Line a baking tray with parchment paper.
预热烤炉。烤盘铺上不粘纸。

2)
Beat butter, icing sugar, salt and vanilla extract until softened.
将牛油,糖粉,盐和香草精搅拌成泥。

3)
Fold flour and ground almonds into butter mixture using a spatula.
加入面粉和杏仁碎。

4)
Wrap dough with cling film and refrigerate for about 20 minutes.
把面团放入密封袋里送进冰格冷冻20min。

5)
Roll out the dough in between two plastic sheets to about 1 cm thick. Cut out shapes using your preferred pastry cookies cutter
把面团覆盖在2张塑料纸里,杆成1cm厚度。用饼干模印出喜爱的形状。

6)
Bake cookies for 15 minutes or until golden brown. Remove from heat and cool on wire rack then store cookies in an airtight container.
烤12-15min或直到金黄色为止。把饼干放在架子上散热,才装入密封盒里。

  13. Any kind of cookies that will melt into mouth once biting is my fav. Cookies look delicious. It's good to eat with a cup of pepper mint tea(coz I don't drink coffee). Living in Sydney don't have chance to eat M'sian CNY cookies at all but now that I've started cooking/baking seriously, there are few recipes that I would like to try on this CNY.
