Radish Cake 萝卜糕

食谱摘自《面食小点心》,小小改动:

Ingredients 材料:
400gm Rice flour 沾米粉
40gm Wheat starch 澄粉
1000gm Water 清水
500gm Radish 白萝卜
5 Dried mushrooms 香菇
5 Shallots 红葱头

Seasonings 调味料
21/2tsp Salt 盐
1/2tsp Pepper 胡椒粉
1tbsp Sugar 糖

Method 做法:
1)
Soak dried mushrooms till soft, trim off stems and dice. Peel, rinse and slice shallots. Peel, rinse and shred radish.
香菇泡软,去蒂切丁。红葱头去皮,洗净切片。白萝卜去皮,切细丝。

2)
Sift rice flour and wheat starch together into mixing bowl. Add water to form rice flour batter.
沾米粉和澄粉过筛,加清水成米浆。

3)
Heat 2 tablespoon oil in wok. Stir fry shallots, followed by mushrooms and radish till fragant. Add rice flour batter, stirring well till batter thickens. Dish out.
锅里烧热2大匙油,放入红葱头,接着香菇和白萝卜。加入
米浆。米浆炒着浓稠,盛出。

4)
Brush baking tin with cooking oil and pour in cooked rice flour batter.
模型均匀沫少许油,将炒好米浆铺入模里。

5)
Flatten the batter surface with spatula. Steam for 40min. When cool, cut into pieces.
整平表面,放入蒸锅蒸40分钟。

Suggest:
Pan fry the radish cake to get the crispy surface.
