Pumpkin Ondeh-ondeh 金瓜汤圆

最近的冰厨里多了一位常客,那就是金瓜耶。
近来无故迷上了吃金瓜。
以前,总觉得要处理这个瓜很麻烦, 肉又厚,皮又硬,煮起来就是绵绵烂烂,加甜甜的味道。
如此而已。
Google了以后,才知道原来金瓜的好处还真多雷。嘻嘻,有眼不识o-yi-o。
就这样,去了Jane Chew的家翻了翻她的食谱,印象中她做过Ondeh-ondeh。
找到咯,材料还蛮简单的。真感谢Jane的分享!
想好,马上开工咯。

在写帖子的时候,才发现原来我从没想过Ondeh-ondeh的华语应该怎么翻译。
Google一下了以后,哈哈,原来它叫汤圆雷。
我的妈呀,汤圆,那就汤圆吧!


食谱大纲来自Jane's Corner:

Ingredients 材料:
75gm Pumpkin 金瓜
75gm Glutinous flour 糯米粉
1/2tbsp Wheat starch 澄粉
30gm Water 水

Fillings:
50gm Shredded gula melaka or palm sugar 椰糖切碎

Garnish:
60gm Shredded fresh coconut add 1/4tsp salt 椰丝加盐

Method 做法:
1)
Peel and cut pumpkin into pieces. Steam for 8min until soft. Drain the water from steamed pumpkin and mash.
金瓜去皮切片,大火蒸软约8min,取出滤干水分,乘热压成泥。

2)
Steam shredded coconut for 5min, let it cool in a plate.
蒸加盐了的椰丝约5min,放冷待用。

3)
Sift glutinous flour with wheat starch.
糯米粉和澄粉过筛。

4)
In a big bowl, mix mashed pumpkin and flour. Add water slowly, knead until the dough are soft not too dry or sticky and can roll into a ball. 
把糯米粉加入金瓜泥中,再慢慢加入水揉至光滑粉团。

5) 
Roll the dough into small ball, flatten and fill in the palm sugar. Wrap it up nicely and roll it again. Continue to do this until the dough are finished.
把粉团搓成一粒粒小圆球,然后包上馅料。

6)
Boil a pot of water.
取一小锅,放入适量水,煮滚。

7)
Put the wrapped Ondeh-ondeh into the boiling water and cook. When the Ondeh-ondeh floats to the top, the dough is cooked. Roll the cooked Ondeh-ondeh in the steamed white coconut shreds.
把圆粉团放进煮滚的水中,中火煮至粉团浮上水面即是熟透,捞起。放入盛有白椰丝的盘中,让粉团滚上椰丝即告完成。

Serving: 10balls

    做好的ondeh-ondeh只有淡淡的金瓜味,可是和椰糖混在一起也还蛮搭的。
